Today's recipe comes from Lone Star Legacy: A Texas Cookbook. After flipping through this cookbook, I wasn't really impressed with it. I picked this as a simple and somewhat healthy recipe to try. It came out better than I expected. Sarah said it reminded her of fried fish, without being fried.
Baked Fish Parmesan
Ingredients:
- 1 box (12 ounces) Ritz crackers (see notes)
- 3/4 to 1 cup grated Parmesan cheese
- Salt
- 1/4 pound melted butter
- 1 pound fresh fish fillets
Directions:
- Preheat oven to 400F. Combine crackers and Parmesan cheese in blender or food processor.
- Add a little salt to the melted butter.
- Dip fish fillets in butter and then in the cracker mixture, and place in glass baking dish.
- Bake at 400F for 15 minutes. Broil for 1 to 2 minutes.
Notes:
This recipe calls for WAY too many Ritz crackers. I cut it down to two sleeves and it was still too much. I'd suggest one sleeve of crackers and maybe 1/2 cup of cheese. I used cod for the fish and a mixture of Parmesan, romano, fontina, and provolone cheese.
Aha! So that's why there are so many cracker crumbs in the trashcan!
