I decided to try to make the Spicy Beef Curry Stew again today. This time, I added more salt and pepper, garlic, chipotle, and curry powder. It came out way better.
Changes to ingredients:
- 2 chipotle peppers in adobo, diced (instead of 1)
- 2 Tablespoons curry powder (instead of 1)
- 1½ Tablespoons garlic, minced (instead of 2 teaspoons)
I'm glad I made this one again, it was nice to see the notes I made last time actually improved the recipe. :) See the link above for the whole recipe.
Note:
I put the sauce in a medium pot and brought it to a boil, then added 1 Tablespoon cornstarch mixed with 2-3 Tablespoons cold water. A slightly thicker sauce was a nice improvement too!
