Mm, this looks great! We had quinoa over here for dinner tonight too, in the guise of a big ol' chopped salad. Red leaf lettuce and napa cabbage sliced into thin ribbons, a couple leftover grilled chicken breasts sliced into bite-sized pieces, along with sliced bell and serrano peppers, and raw corn cut off the cob. Threw some warm, just-cooked quinoa on top, poured in a quick lime-cumin vinaigrette (lime juice, vegetable oil, agave syrup, salt, pepper, cumin), and tossed it all up before serving. So good and totally summery!

I made this last week. My wife has celiacs disease, so gluten is a no no. Plus, we are both trying to eat healthier.

The hard part is while she is ok with whatever she can get for fuel, for me food needs to taste good.
